Nut Butter Cookie

 

Ingredients

  • 1 cup plus 2 tbsp. flour

  • ¾ tsp. baking soda

  • ½ tsp. kosher salt

  • 1 stick unsalted butter, softened to room temperature

  • ½ cup Tastachios Nut Butter

  • ½ cup sugar

  • ½ cup light brown sugar, packed

  • 1 tsp. vanilla

  • 1 large egg, room temperature

  • 1 large egg yolk, room temperature

  • 1 ½ cup Semisweet Chocolate Morsels

  • ¾ cup Tastachios kernels, coarsely chopped or whole

Directions

  1. In a medium mixing bowl, combine the flour, baking soda and salt. Whisk together and set aside.

  2. In a stand mixer bowl, combine the butter, nut butter, and both sugars, mix until creamy.

  3. Scrape the sides of the bowl and mix in the Vanilla.

  4. Add in the egg and egg yolk.

  5. Beat on medium speed until the eggs are blended in.

  6. Add in the flour mixture gradually until incorporated.

  7. Stir in the chocolate morsels and Tastachios, mix well.

  8. Place in a refrigerator and chill.

  9. Portion the dough onto a prepared cookie sheet lined with parchment paper.

  10. Using a cookie scoop or tablespoon, portion evenly sized cookie balls.

  11. Preheat oven to 350 degrees.

  12. Bake one sheet at a time on the cent rack for 12 to 14 minutes or until the cookies appear brown around the edges.

  13. Transfer to a wire rack to cool.
