Tastachio Pasta Carbonara
Ingredients
2 large eggs
2 egg yolks
3 tbsp Tastachio Nut Butter
2 tsp black pepper
1 cup grated Parmesan cheese
Salt to taste
Bucatini Pasta
1 cup pasta water
1/3 cup shelled Tastachios
Parsley for garnish
Grated Parmesan cheese for garnish
Directions
In a bowl, whisk together the eggs, nut butter, black pepper, 1 cup grated Parmesan cheese, and a pinch of salt. Set aside.
Per directions on the pasta box. In a large pot add water and salt.
Cook pasta and drain once it is al dente.
Reserve one cup of pasta water (wery Important)
Put pasta back into large pot and place over low heat.
Stir pasta gently and constantly while adding the carbonara sauce.
The heat from the pasta will cook the eggs.
The pasta will bind together.
To loosen, slowly ladle in hot pasta water until the sauce becomes creamy and is well incorporated.
Plate your carbonara and finish with fresh parsley, chopped Tastachios and grate Parmesan cheese.
Add a pinch of salt to taste.
