Cheddar Wafer
Ingredients
½ cup unsalted butter
2 cups grated sharp cheddar cheese*
1 cup flour
½ tsp. smoked paprika
½ tsp. salt
½ tsp. red pepper flake
1 cup shelled Tastachios**
1 beef bouillon cube, powdered
*Kerrygold White Cheddar
** (1) 8oz. bag or 4oz. shelled equals one cup
Directions
In a bowl, combine flour, salt, smoked paprika, red pepper flake, and bouillon.
In a food processor, pulse together the butter and flour mixture until thoroughly combined (Note layer flour, butter, flour).
Gradually add grated cheese mixture one cup at a time, pulse until blended.
Remove mixture and place in a bowl.
Stir in Tastachios and turn by hand until evenly distributed and compacted.
Place dough onto a lightly floured surface and divide in half.
Shape each piece into a log about 1 inch thick.
Wrap in plastic and chill until firm.
Preheat oven to 350 degrees.
Cut the chilled dough into 3/8 inch slices and place about ½ inch apart on a non-greased cookie sheet.
Bake for 12 minutes until golden brown around the edges. (Optional, carefully flip after 8 minutes.)
